Bacterial Count Troubleshooting
Regular cleaning and sanitising of the soft serve machine can help reduce bacterial buildup. The machine should be completely disassembled to clean every single part thoroughly with the use of all the provided brushes. The mix inlet hole, extending from the hopper to the rear of the freezing cylinder, could be cleaned with the white bristle brush. Use the black bristle brush on the rear shell bearing at the back of the freezing cylinder, adding enough cleaning solution to the brush for adequate sanitation of the bearing. Rerun mix, if local health codes allow reuse, should be placed in a clean, covered, stainless steel container and used the next day.
Never use rerun mix in the priming of the machine. Always take off any foam and dump that foam in the trash before adding the rerun back into operations in a 50/50 mix ratio. Have one day a week, operate the mix as low as possible and dump the mix at closing. This breaks the rerun cycle to a minimum amount of bacterial and coliform counts.
No Product Dispensed
If the machine is not dispensing product and the draw valve is open, the mix inlet hole may be frozen up. This can be eliminated by adjusting the hopper temperature. If the beater motor has tripped, the freezer should be reset. Check the beater rotates clockwise and if it is rotating counterclockwise, adjust it. Also, check the circuit breaker is on and replace any blown fuses. Always keep adequate mix levels in the hopper. If the air orifice is missing install it in the air tube.
The Product is Too Soft
To address soft product issues, adjust the viscosity settings. Ensure sufficient airflow around the machine for proper condenser performance. Replace worn scraper blades regularly for consistent results. Clean the condenser monthly to maintain efficiency. Always use a fresh mix and discard any expired batches. Quickly locate and resolve any water leaks to avoid performance issues.
The Mix is Too Warm in the Hopper
Warm mix in the hopper usually means that a temperature adjustment is off. Assist a technician in recalibrating the hopper temperature. Missing/worn gaskets at points around the hopper- replace any such gasket and adjust the sealing appropriately. Make sure that the hopper cover is placed properly and fix its adjustment, if necessary. When the mix light is off, turn on the mix by hitting the MIX button.
Freezing Cylinder Walls Are Scored
Bent beater assemblies can cause scoring on the freezing cylinder walls. Repair or replace the beater to resolve the issue. Check the front bearing on the freezer door. If missing or worn, install or replace immediately to prevent further damage.
No Freezer Operation After Pressing AUTO
If the freezer does not operate after pressing the AUTO button, ensure that the machine is connected to a live outlet. Reset circuit breakers that have tripped or replace blown fuses. If the beater motor has tripped, the freezer needs to be reset before operation can be resumed.
